Menu Plan Monday - January 10


This week I am again trying to eat healthier, and my recipes should reflect that.  A few are repeats from last week that everyone liked, and a couple are new, and hopefully just as delicious!

Meal 1:  Salmon Salad (repeat)
Meal 2:  Beef & Barley Soup (repeat)
Meal 3:  Chicken & Bean Soup
Meal 4:  Chicken Enchiladas (repeat)
Meal 5:  Shrimp Scampi

Our dessert for the week is going to be Protein Cheesecake.  It is 8 servings so it will last about 2 1/2 nights.  For the other nights we have healthy popcorn and endamane. 

All of these recipes and ideas come from the Eating for Life book, which is part of the Body for Life diet.  :o)
