Menu Plan Monday - April 4


I did not look for recipes again before my grocery shopping trip this afternoon.  So we are having a lot of the same ol' things.  Here's our menu for this week. 

Sunday: Salmon, Zucchini, and Baked Potatoes
Monday: Spaghetti and Crescent Rolls (Soccer Practice)
Tuesday: Potted Chicken Pie
Wednesday: Undecided
Thursday: Eating Out
Friday: Taco Salad

I'm hoping to find some new recipes soon.  What are you making this week?  Anything you would like to share?

Your week looks yummy!! We are making spaghetti and meat balls, baked salmon, whole roasted chicken with rice and not sure about the rest of the week. It's so hard to plan ahead! :)

The Best Burrito/Fajita Ever!

Mix:
2 T salt
2 T garlic powder (T=Tablespoon)
3 T oregano
1 T chili powder
3 T ground cumin
1 T paprika
1 T cayenne

Mix all dry ingredients together and store in container

4 T olive oil divided
2 T lemon juice
2 boneless, skinless chicken breast or more depending on size (cut in chunks or strips)
1/2 medium red peppers
1/2 medium green peppers
1 medium onion cut in half then slices
1 can black beans, rinsed and drained
flour tortillas - burrito size

Mix 2 rounded tablespoons of dry mix in zip lock bag, add 2 tablespoons oil and 2 tablespoons lemon juice and mix in bag to make marinade, add chicken and marinade at least one hour or more.
Put the additional 2 tablespoons of oil in large fry pan and add peppers and onions - sauté until crisp. Remove from pan with slotted spoon and put to the side. Add chicken and marinade to pan and cook for a few minutes and add beans. Continue to cook until chicken has cooked through. Add veggies back to pan and mix until warm. Warm tortillas and add fajita mixture, rice, salsa, cheese, jalapenos, etc. YUM!
