Menu Plan Monday - January 13

Last Monday I began a 3-Day Detox!  I know, CRAZY, right?!  Well, I made it through all of Day 1 wonderfully!  Then came Day 2...

Let's just say that I cheated a little.  Not bad cheats, just some healthy options, like oatmeal, to fill me when I was hungry.  ;)  All in all though, I completed most of the program, and it was a great way to kick off my healthy eating plans for 2014!!

It was a great challenge and I am taking away a few things.  I've continued to drink the lemon/ginger water each morning, will still be making the yummy salad and dressing, and am continuing to drink the teas. 

Last week we also had Crock Pot Chicken Taco Chili and everyone gave it two thumbs up!!  It was very easy to make and we had a ton leftover for a second night.

This week we are planning to have:

Slow Cooker Baked Ziti {Mon & Tue night}
Slow Cooker Honey Garlic Chicken {Wed & Thur night}

And I also have to tell you about the cookies that I made last night.  Hubby asked if I could make a snack but I didn't really want to make a batch of cookies with a ton of butter or shortening.  I searched online and found this healthier and easy chocolate chip cookie recipe.

Chocolate Chip Peanut Butter Oatmeal Cookies

I don't know how healthy they are, or even if they are healthy at all, but I felt better about using oatmeal, brown sugar, honey, and coconut oil vs. butter, shortening, vegetable oil and sugar.  And everyone LOVED was hard to put them down!!

OH -- And I lost 3lbs this week!!  Yay, just 7 more to go!

You are brave, I just couldn't do a detox. Congratulations on losing the lbs. I'm still trying to figure out meal planning. I'm too spontaneous, or is it just undisciplined?
